Today at work I had to brainstorm some new items for our seasonal menu. I try to incorporate new ingredients in the kitchen by using the same thing in different kinds of dishes. For example, pulled pork has been a popular request for us to bring back so we came up with three different dishes that all use pulled pork: a BBQ Platter including ribs, pork belly, and pulled pork; a carnitas burrito bowl; and a pulled pork pizza. This way, we sell out of the pork and don’t end up throwing any away.
In order to finalize the menu pictures are needed, which means we get to make the dishes and give them a try! The pulled pork pizza was a favorite for everyone who tried it, so I figured it must be blog post worthy. The pizza is topped with caramelized onions, cheese, BBQ pulled pork, bacon, sliced tomatoes, and finished with scallions. At first I wasn’t sure how I felt about all of that on a pizza, but I quickly changed my mind after the first bite. The tomatoes give it a nice fresh taste so that it isn’t too sweet, and the bacon adds a much needed crunch. I’m interested to see how this sells once the summer menu is done; I’m sure it will be a hit!
