Kimball’s Cav’ern Pork Belly Tacos

These days in the food industry what used to be considered a taco has had quite the makeover, and in many different ways.  There are many restaurants that have their own original twist on a taco dish, and most don’t follow the traditional taco-seasoned hamburg, lettuce, and tomato that we all know and love.  Tacos can have just about anything on them nowadays and I’m here for it!

A customer favorite at Kimball’s Cav’ern is the Pork Belly Tacos:  three flour tortillas warmed on the grill and stuffed with crispy pork belly, cole slaw, pickled onions, and cucumber lime aioli, all homemade!  The flavors melt together to create a delectable winter dish.  I’ve never heard someone say they didn’t like them, so I gave them a try to see what the hype was all about.  After the first bite, I knew why these tacos were so popular.  I’ve worked at Kimball’s Cav’ern for 9 years, and just recently we started experimenting with new ideas for tacos.  We put this dish on as a weekday special and received such good feedback that it made it onto the menu shortly after.  They’re nothing like your traditional taco which is why everyone loves them!  If you’re in the mood for some good pub food, check out the menu on their website here!
