Most college students live off of a strict ‘Ramen noodle and D-hall’ diet. I never had to live in a dorm and I always had the luxury of having a kitchen in every place that I’ve lived, so I took advantage of it. I’ve said it many times before, but I really do love to cook. This week was a little crazy so I wanted to whip something up quickly with whatever I could find in the fridge. The ingredients I had to work with were steak, broccoli, and eggs which sound like the makings of a perfect rice bowl to me.
I seasoned the steak with garlic, smoked paprika, seasoned salt, and black pepper, then pan-fried it over medium heat. Meanwhile, I boiled the broccoli and brown rice. Once the steak was done, I added garlic, diced onions, and mushrooms to the same pan to soak up the flavor, then added the broccoli to brown it just a bit. The rice, broccoli and mushrooms, and steak went into a bowl in that order and to top it off I added a sunny-side up egg. The best part of this meal was the super easy honey sriracha sauce I drizzled over it. All it takes is 1/2 cup of soy sauce, 1/4 cup of honey, 1 teaspoon of sriracha, 1 teaspoon of toasted sesame oil, and 2 cloves of garlic and you have yourself a delicious sweet and spicy sauce that tastes amazing on steak, chicken, shrimp, or even pork.
I realize after writing this out that it doesn’t seem like a quick dinner, but I only had to wash 2 dishes; I didn’t have to go to the store to pick anything up; and it only took about 20 minutes to make a delicious meal! Sometimes being creative with what you have is much better than planning out a complicated dinner, and it tastes just as good.
